This soup is loved by all. It is so easy that anyone who has a few minutes of spare time can make it!

This soup is simple to make and ready in no time. Growing up, it was my most favorite soup. I remember standing next to my Mom as she added each ingredient to the boiling pot of water. The whole family liked it so much she made it at least once a week.

You can make this soup vegan like the recipe or add meat to the broth. During my childhood meat was considered a treat. Most of the time we could only afford to use vegetables from our garden but on the rare occasion that we had meat, my Mom would add beef.

Ingredients for Potato Soup

Ingredients:

Potato, 2 large cut on 1in cubes
Carrot, 1 medium size, grated
Onion, ¼ large chopped in small pieces
Garlic, 3 cloves chopped
Black Pepper, ¼ tsp
Dry Parsley, ½ tbs
Oil, 2 tbsp
Celery, 2 sticks chopped
Water, 4 cups

Add the oil and onions in a pot over medium heat.
Cook until the onions are tender and caramelized.
Add carrot, garlic, celery, potatoes, and water.
Bring the water to a boil and cook for 15 mins or until the potatoes are soft.
Season with salt, pepper, and parsley.
Turn off the heat and let it rest for 10 mins before serving.
